Yes, the words of Mark Twain have never rang so true. I have been fielding questions for the last year in regards to the status of the brewery, heard rumors, told we didn’t have a clue what we were doing and a whole lot more. It never ends. So here it goes…
We have been working for the better part of 2+ years putting together the pieces to ensure one thing and one thing only, that when we open, we succeed. There is no point in starting a business, much less a brewery, unless you’ve checked, double checked and triple checked to ensure that you have all your bases covered. We’ve met with countless professionals in their fields to consult with us, check our financials, go over our business plan, review marketing plans, have conversations in regards to finances, location, branding, networking, speaking with and meeting others within the industry all to ensure that we have thoroughly thought of everything we could. We have been blessed to have surrounded ourselves with some amazing people who have been a tremendous help.
In the past year we have visited other breweries, attended multiple craft beer events and festivals, met a lot of really cool industry people, researched distribution, retail, spoke with many establishment owners, vendors and the like all to understand as best we can what things we need to do in order to succeed. We’ve developed some amazing recipes (one of which is a super killer Imperial IPA), reworked the business plan multiple times, ran multiple production scenarios and have spent numerous sleepless nights putting in as much work as possible to get everything we need to get done, done.
Over the last 3 or 4 months we have been working with the amazing Harriet Parker at the SBDC at Waubonsee Community College campus in Aurora to shore up our vision. Short of a few last quotes from vendors, we are ready to start seeking out financing/financial partners.
So now you know what’s going on. As soon as we have more news to report, we will.
